木瓜多聚原花青素降解产物的液相色谱-电喷雾质谱分析

Abstract[目的]分析以茶多酚为亲核剂的木瓜原花青素降解反应产物。[方法]采用液相色谱-电喷雾质谱联用技术(LC-ESI-MS);分析主要降解反应产物。[结果]3个新产物的结构分别推测为(表)儿茶素-(4-8)-(表)没食子儿茶素、(表)儿茶素-(4-8)-(表)没食子儿茶素3-O-没食子酸酯和(表)儿茶素-(4-8)-(表)儿茶素3-O-没食子酸酯。[结论]该研究为木瓜原花青素降解产物进一步在医药品、保健食品、食品添加剂和化妆品等领域上的应用奠定基础。
