Abstract本发明提供一种制备云南小粒种咖啡豆的方法,以及一种利用酶制剂提升云南小粒种咖啡豆品质的方法。咖啡鲜果脱果皮后加入酶制剂,在一定条件下进行发酵,经过适当的处理,即得到品质提升的咖啡生豆。本发明的发酵工艺操作简单。其特点是在咖啡鲜果脱果皮后加入酶制剂进行发酵,有效地调控发酵过程及相关因子,缩短了发酵周期,提高了咖啡豆品质,从而实现了咖啡豆酶处理的规范性生产,保证了质量的稳定性。
