铁皮石斛及六种石斛属花关键香气物质研究; Study on the key aroma compounds of Dendrobium officinale and six Dendrobium spp. flowers

摘要The aroma characteristics of Dendrobium flowers are important parts of the quality of flowers, which largely determines the sensory experience of consumers and its market value. The volatile chemical components in Dendrobium flowers are the material basis of their unique aroma characteristics. The analysis and research of the characteristic aroma compounds in Dendrobium flowers is the premise of clarifying the chemical composition of Dendrobium flowers aroma and realizing the application of its characteristic aroma, which is of great significance to explore the fragrance types of natural Dendrobium flowers in China. However, the chemical nature of the aroma characteristics of Dendrobium flowers is still unclear, especially the research on trace key aroma compounds is still in its infancy. In this article, seven kinds of Dendrobium flowers widely planted in Yunnan Province were selected as the research objects. The modern flavor chemistry research and the new developed sensomics research methods were adopted. In view of the technical challenges in the field of flower aroma research, through the development of new technical means and strategies, the basis of odor chemistry and its change rules of characteristic aroma of Dendrobium flowers were analyzed . The main research contents are as follows. Direct solvent extraction-solvent assisted flavor distillation (DSE-SAFE) was used for the first time to extract the aroma of seven kinds of Dendrobium flowers in Yunnan Province. The suitable method for the extraction of aroma from Dendrobium flowers was established and optimized to make the aroma of the aroma extract closer to the natural flower aroma. The fresh flower aroma which can only be used for single detection in previous studies was fixed in the solvent and preserved for a long time, so as to carry out multiple analysis and detection and accurate quantification of aroma compounds. 47 species (27 of which were first found in flowers of Dendrobium of officinale) and 30 aroma compounds were identified from flowers of Dendrobium of icinale and its flower tea by GC-O, GC-MS and AEDA. In addition, the internal standard quantitative method combined with standard curve and relative response factor was used to accurately quantify the aroma compounds of D. of icinale flowers and its tea. Combined with the calculation results of aroma activity value (OAV), it was confirmed that the key aroma compounds of D. of icinale flowers were 1-Octen-3-ol, 3-Hexen-1-ol, (Z)-, Phenethyl alcohol, Benzyl alcohol, Linalool, Heptanal, Decanal, Vanillin, Hexanal, Nonanal, Phenylacetaldehyde, Naphthalene, 1-Methylnaphthalene, 2-Methylnaphthalene, α-Pinene, Theaspirane, Methyl salicylate, Carvacrol and 4-Ketoisophotone. The key odorants of D. of icinale flower tea were Hexanal, Octanal, Nonanal, trans-2-Nonanal, Heptanal, Phenylacetaldehyde, Decanal, Vanillin, 1-Octen-3-ol, 1-Octanol, Nonanoic acid, Octanoic acid, 4-Ketoisophotone, β-Lonone, Dihydroactinidiolide.
