Abstract本发明提供一种新的天然红色素米团花醌,其制备、合成方法以及在食品和医药领域中的应用。米团花醌,其结构为对苯醌和脯氨酸的复合物,是一种新的天然红色色素。本发明从米团花花蜜中直接分离纯化,得到米团花醌;同时采用简便的合成方法得到米团花醌。天然红色素米团花醌无毒,安全,色阶高,保色效果好,是食用色素家族的新成员,并具有强的抑制酪氨酸激酶受体活性,能广泛应用于食品领域和医药领域。
